Healthy family recipes from HENRY

A new year often makes us look at healthier options after the excesses of Christmas, but planning and cooking healthy family meals can seem like a big task. But with these simple recipes from HENRY you’ll find it much easier to prepare quick, balanced meals.

 

Breakfasts

You don’t need a fancy jar to make these delicious and healthy overnight oats. A bowl or even a jam jar (if you want to take then to work) works perfectly well and they are made the day before so you’ve all got a delicious healthy breakfast in moments. You can use non dairy yoghurt too and a large bag of porridge oats cost pennies and lasts for months. You can add any fresh or frozen fruits you and your family like, try banana and peanut butter, apple and cinnamon, mixed berries or my favourite mango, lime and mint!

 

Lighter meals

Why not try these mini vegetable quiches made with wholemeal tortilla wraps, eggs and your favourite toppings. Try adding some cooked bacon, or any veg left in the fridge such as chopped peppers, spring onions or cooked broccoli. They’re tasty and make a great lunch for us adults too.

 

Main Meals

This chicken with cous cous recipe is a really tasty meal and any leftovers are perfect for lunch the next day. It’s also really energy efficientas it’s a one pot dish with the chicken and veg in the oven and the cous cous is made with boiling water in a bowl. You can adjust the vegetables to ones your family prefer.

 

Desserts

I don’t know about you but I don’t thinkย  you can beat a fruit crumble for pudding! This is a super easy recipe that uses fresh, tinned or frozen fruits (tinned blackberries, apricots, pears or peaches or frozen forest fruits all work well) and your little ones will love getting messy helping you make a crumble topping.
